Ingredients for masala khichdi recipe: 

For Masala Khichdi:

  • 1 cup of short-grain rice
  • 1 cup moong dal
  • 1 cup chopped and peeled potato
  • 1/2 cup chopped carrot
  • 1 cup chopped tomatoes
  • 1/4th cup green peas
  • 1/4th cup chopped onions
  • 1 cup chopped shimla mirch
  • 2 green chillies
  • 4 cups of water
  • A handful of chopped coriander leaves
  • Salt as per taste
  • 1 tbsp. red chilli powder
  • 1 tsp. turmeric powder

For tempering (tadka) of masala khichdi: 

Procedure to make masala khichdi:

  • Wash rice and moong dal in cold water and soak them in water for about 20-25 minutes.
  • Take a pressure cooker and heat it by adding oil and ghee to it. 
  • Now add cumin seeds and mustard seeds, let them splutter and turn a little brown.  
  • After that, add black pepper powder, dried red chillies, bay leaves, cinnamon stick, hing powder and cloves.  
  • Now add all the chopped vegetables, green chillies, shimla mirch and green peas in the pressure cooker. Let them fry for a few seconds and stir the whole mixture slowly. Sauté all the vegetables until they start looking soft and mushy. 
  • After the whole mixture looks cooked, add red chilli powder, turmeric powder, salt and ginger-garlic paste into the pressure cooker. 
  • Mix everything well and cook for 1 minute on medium heat. 
  • Drain the water from soaked moong dal and rice and add both to the pressure cooker. Stir everything on a low flame. 
  • Add 4 cups of water into the pressure cooker and close the lid. 
  • Keep the lid closed. Let the mixture cook on medium heat up to 3-4 whistles of the pressure cooker. 
  • Let the pressure cooker cool down for 5-10 minutes. After that, open the lid and sprinkle some garam masala to it and stir.
  • Now add coriander leaves and mix mildly. 

Notes:

  • You can use basmati rice or any short-grain rice.
  • You can use tuver dal instead of moong dal. 
  • All the spices and salt can be added as per your taste and requirement.
  • You can increase or decrease the quantity of oil or ghee.
  • Clarified butter can be used in place of ghee. 
  • Vegetables can be added based on your choice and availability. 

How to serve masala khichdi?
