Recipes for Raksha Bandhan

1) Chocolate Cake:

Chocolate Cake

Who doesn't like soft, moist and delicious chocolate cake that can be prepared in a mere 10 minutes? Touch the soft spot of your brother's heart with chocolaty deliciousness which is perfect for brothers of any age. And, who knows it may inspire them to gift you something special.

Ingredients :

  • 4 tbsp of all-purpose flour (Maida)
  • 4 tbsp of powdered sugar
  • 2 tbsp of cocoa powder
  • 4 tbsp of chocolate chips or chunks
  • 1 tsp of baking powder
  • 1 tsp of rock salt
  • 1/2 tsp of vanilla extract
  • 2 tbsp of oil/butter
  • 4 tbsp of milk

Method:

  • In a bowl, mix all the dry ingredients- flour, sugar, cocoa powder, baking powder, and salt.
  • Then add all the wet ingredients- vanilla extract, oil/butter, and milk.
  • Stir it properly and then add chocolate chips/chunks. You can even add oreo cookies.
  •  Pour the batter in the mugs, but make sure that your mug has some space to rise.
  • Microwave it for 1 minute at the highest temperature.
  • After its done, insert a toothpick and check if it comes out clean, your cake is done and if not microwave it for another 30 seconds and check.

2) Phirni:

Phirni

Phirni is a rice pudding that is made from coarsely ground rice, milk, and sugar. It is a delicious North Indian Desert that is made especially during the Diwali, Raksha Bandhan, or any other special occasion.

Ingredients :

  • 1 Cup rice
  • 1/4 cup water
  • 2 cup milk
  • 1/2 cup sugar
  • 1/2 tsp of cardamom powder
  • 1/2 tbsp of finely chopped almonds and pistachios

Method:

  • Wash the rice with cold water and then soak it for 30 minutes.
  • Strain the water and then take rice in the grinder jar. Add fresh water and grind it, do not make it into a fine paste.
  • In a pan, boil milk on medium heat and then add rice paste.
  • Mix and keep cooking till the rice grains are soft and the milk has thickened. 
  • Add sugar and cardamom powder and stir well.
  • Cook for 2-3 minutes and then turn off the stove.
  • Garnish it with finely chopped almonds and pistachios

Note:

  • Keep string while making Phirni.
  • Refrigerate it for few hours before serving.

3) Coconut Ladoo:

Coconut ladoo

This is probably the easiest that you can make this Raksha Bandhan. These delicious laddoos are pretty quick to make and if you are not a fan of cooking, but still want to make something special for your brothers, this recipe is definitely for you.

Ingredients :

  • 1 tbsp of butter
  • 3 cups of desiccated coconut powder
  • 1 cup condensed milk
  • 1/2 tsp of cardamom powder
  • 1 tbsp of finely chopped dry fruits

Method:

  • In a pan, take one tbsp of melted butter and add 2.5 cups of desiccated coconut powder. 
  • On a low flame, sauté it for 1 minute and then add condensed milk.
  • Keep stirring the mixture on medium flame till it starts to leave sides of the pan.
  • Add cardamom powder and finely chopped dry fruits and mix well.
  • Let the mixture cool a little bit at room temperature.
  • Then scoop out the mixture with a spoon and shape it onto round ladoo's.
  • Take the remaining desiccated coconut powder in a plate and roll the ladoo's in it. 

4) Kesar Jalebi:

A well-known and delicious North Indian confection consisting of flour and covered in sugar syrup is called jalebi. It is the ideal vegetarian dessert recipe for many important holidays and gatherings with family or friends. Ingredients :

  • 1/2 all-purpose flour
  • 3/4 cup water
  • 1/2 cup ghee
  • 1 cup of thick, tart curd
  • 3/4 cup of sugar
  • 3 lemon slices

To garnish :

  • 4-5 saffron strands
  • 1 tbsp pistachios

Method:

  • Mix all-purpose flour with curd and make a batter. If the batter is too thick, add water. 
  • Take sugar and water in a pan. Boil on low flame for 15 minutes until you get a liquid that coats the back of a spatula. Add lemon juice so that the syrup doesn't thicken. Gather and discard the dirt that is collecting on the surface.
  • Warm the milk, add the saffron strands and let it sit for five minutes. Add the milk and saffron to the sugar syrup, then set it aside.
  • Now check the batter and stir in a little all-purpose flour. The batter will now have a pouring consistency
  • Place the ghee in a flat bottom pan and heat it over medium heat as you pour the batter into a piping bag. Squeeze the batter into circular shapes and place it straight in the ghee to make the jalebis.
  • Fry them until they turn golden brown. After they change the colour, soak it in the sugar syrup and garnish it with pistachios.

5) Whole Wheat Malpua:

Traditional Rajasthani food called Wholewheat Malpua is made using wholemeal flour, fennel seeds, sugar, ghee, and peppercorns. Serve this delicious dessert recipe at festivals and special events. Method:

  • Peppercorns should first be ground into a fine powder. Mix 1/2 cup water and sugar in a deep, shallow pan, and heat for 3 minutes. The mixture should be poured into a basin and set aside to cool.
  • Ghee should be heated in a large pan as you do this over a medium flame. In the liquid mixture, combine flour, fennel seeds, powdered peppercorn, and 40 ml of water.
  • In the ghee, add one ladle of the batter and cook till golden. Transfer the cooked malpua to a plate and then prepare the remaining seven malpuas in the same manner.
