Everyone craves street food and one of the most famous street foods comes originally from the 'City of Dreams' Mumbai. Yes, your guess is right! This recipe is popularly known as Mumbai Style Pav Bhaji. It is the king of street food from Maharashtra. This recipe is made with a combination of spices and the famous Pav Bhaji masala powder. The Bhaji is made with boiled vegetables like potato, cauliflower, and peas which are partially mashed and stir-fried with finely chopped red onions, tomatoes, garlic, and ginger. The dish is then served with Pav alongside some finely chopped raw onions and a generous amount of butter over the Bhaji.

Traditionally, Pav Bhaji was served as a power pack nutritional dish to the textile workers in Mumbai. Gradually this dish got famous and is now served on almost every other corner of Mumbai as fast food. With passing time this dish met a lot of variations like Cheese Pav bhaji, Green Pav Bhaji, Tadka Pav Bhaji, and whatnot. But, the classic of all times, Bhaji topped with a scoop full of butter is everyone's go-to preference. It is very easy to make, so, let us get through the recipe.

Mumbai Style Pav Bhaji Recipe

Ingredients:

  • 3 Tomatoes (finely chopped)
  • 2 Onions (finely chopped)
  • ½ cup Capsicum
  • ½ cup Peas
  • 2 cups Potatoes (boiled and mashed)
  • 1 cup Coriander Leaves
  • 2 tbsp + 1 tbsp Butter
  • 1 tbsp salt
  • 2 tbsp Ginger Garlic paste
  • 2 tbsp Pav Bhaji Masala
  • ½ tbsp Turmeric Powder
  • 2 tbsp Kashmiri Chilli Powder
  • 1 tbsp Coriander Powder
  • 1 + ½ tbsp Dried Fenugreek Leaves
  • ½ tbsp Lemon Juice
  • 2 cups water (or according to the desired consistency)

Ingredients for Toasting the Bread:

  • 1 Dozen Bread Roll (Pav Bhaji Buns)
  • 4 tbsp Butter
  • ½ tbsp Coriander Leaves
  • ½ tbsp Kashmiri Red Chilli Powder
  • ½ tbsp Pav Bhaji Masala

Recipe for Bhaji

  • Add your potatoes and peas to the cooker and boil them until soft and mushy.
  • On the other gas, take a Tawa and add 2tbsp butter to it. Let it heat and then add your finely chopped onions, tomatoes, capsicum, and ginger-garlic paste to it.
  • Saute it until mushy. Add your spices and roast on medium-high heat. Add ½ cup coriander while cooking.
  • Check your potatoes and potatoes and peas. Mash them and add to the Tawa with the other vegetables.
  • Add the 2 cups of water and stir everything until well combined.
  • Let the gravy simmer for about 10 minutes and mush it well together.
  • Garnish it with the leftover coriander leaves and some extra Bhaji Pav Masala for that extra spice (completely optional)

Recipe for Pav

  • Take a flat pan and slice your bun horizontally from the center. One bread will take up a half teaspoon of butter.
  • Add butter to the pan, let it come to its melting point and then add chilli powder, pav bhaji masala, and coriander leaves.
  • Slice the bread and toast it with the masala on both sides.
  • Toast it until golden brown or crispy.
  • Serve it hot with bhaji and some raw onions.
