Punjabi Samosa
Ingredients
- Maida – 1 bowl
- Ajwain – 1 tsp
- Salt – To taste
- Ghee – 3–4 tbsp
- Cold Water – As required
- Oil – 3 tbsp
- Green Chilli & Ginger Paste – 1 tbsp
- Boiled Potatoes – 1 bowl
- Vasant Classic Garam Masala – 1 tbsp
- Boiled Green Peas – ½ bowl
- Salt – As required
- Chaat Masala – 1 tsp
- Lemon Juice – 1 tsp
- Chopped Coriander – As required
- Oil – For frying
Method
For the Samosa Dough:
- In a mixing bowl, add maida, ajwain, and salt. Add ghee and rub it into the flour using your fingertips until the mixture becomes crumbly and holds its shape when pressed.
- Gradually add cold water and knead into a firm dough.
- Cover the dough and allow it to rest for 15–20 minutes.
For the Potato Filling:
- Heat 3 tbsp oil in a pan. Add green chilli and ginger paste and sauté for a few seconds.
- Add the boiled potatoes and boiled green peas. Mix well and lightly mash the potatoes, keeping some texture.
- Add Vasant Classic Garam Masala, salt, and chaat masala. Mix well and cook for a few minutes until the spices are evenly combined.
- Add lemon juice and chopped coriander. Mix well, turn off the flame, and allow the filling to cool completely.
For Shaping the Samosas:
- Divide the prepared dough into equal portions. Roll each portion into a thin, oval-shaped sheet and cut it into two halves.
- Take one half and fold it into a cone, sealing the edge with a little water.
- Fill the cone with the prepared potato and peas filling.
- Apply a little water to the open edges and seal the samosa properly.
- Repeat the same process with the remaining dough and filling.
For Frying:
- Heat oil in a kadai over medium heat.
- Carefully add the prepared samosas and fry them on a low to medium flame until they become crisp and golden brown.
- Remove the samosas from the oil and place them on tissue paper to drain the excess oil.
For Serving:
- Allow the Punjabi samosas to cool slightly.
- Serve them hot with green chutney or sweet tamarind chutney.
Cocktail Idli

Cocktail Idli
Ingredients
- Idli Batter – As required
- Oil – 2 tbsp
- Whole Red Chillies – 2
- Mustard Seeds – 1 tsp
- Hing (Asafoetida) – ½ tsp
- Curry Leaves – As required
- Green Chillies – 2 tsp
- Turmeric Powder – ½ tsp
- Steamed Idlis – As required
- Bell Peppers – ½ bowl
- Vasant Classic Garam Masala – 1 tbsp
- Red Chilli Powder – ½ tsp
- Salt – To taste
- Chopped Coriander – 1 tbsp
Method
For Steaming the Idli:
- Pour the idli batter into the idli moulds.
- Steam the idlis until they are cooked through and soft.
- Allow them to cool slightly, then cut them into bite-sized pieces.
For Cocktail Idli:
- Heat oil in a pan and add mustard seeds.
- Once they crackle, add whole red chillies, hing, and curry leaves. Sauté for a few seconds.
- Add chopped green chilli and sauté lightly.
- Add turmeric powder and chopped bell pepper. Cook for a few minutes until the bell pepper is slightly tender.
- Add Vasant Classic Garam Masala, red chilli powder, and salt. Mix well.
- Add the steamed idli pieces and gently toss until they are evenly coated with the spices.
- Finish with chopped coriander and mix well.
- Serve hot.
Moong Dal Pakoda

Moong Dal Pakoda
Ingredients
- Soaked Moong Dal – 1 bowl
- Sliced Ginger – 1 tbsp
- Whole Garlic – 1 tbsp
- Green Chillies – 4–5
- Water – 30 ml
- Cumin Seeds – 1 tbsp
- Chopped Coriander – As required
- Baking Powder – 1 tsp
- Salt – To taste
- Vasant Strong Hing – 1 tsp
- Vasant Classic Garam Masala – 1 tsp
- Oil – For frying
Method
For the Pakoda Mixture:
- Drain the soaked moong dal and transfer it to a mixer jar.
- Add ginger, garlic, green chillies, and water. Grind into a coarse mixture.
- Transfer the mixture to a bowl and add cumin seeds, chopped coriander, baking powder, and salt.
- Add Vasant Strong Hing and Vasant Classic Garam Masala. Mix everything well.
- Allow the mixture to rest for a few minutes.
For Frying:
- Heat oil in a kadai over medium heat.
- Drop small portions of the prepared mixture into the hot oil.
- Fry the pakodas until they become crisp and golden brown.
- Remove the pakodas from the oil and place them on tissue paper to drain the excess oil.
- Serve hot with green chutney or your preferred dip.
Bajra Khichdi

Ingredients
- Oil – 3 tbsp
- Ghee – 3 tbsp
- Soaked Moong Dal – 1 bowl
- Soaked Bajra – 1 bowl
- Water – As required
- Oil – 2 tbsp
- Cumin Seeds – 1 tsp
- Whole Mixed Spices – 1 tbsp
- Chopped Garlic – 1 tbsp
- Chopped Ginger – 1 tbsp
- Chopped Green Chilli – 1 tbsp
- Chopped Onion – 1 bowl
- Chopped Tomatoes – 1 bowl
- Boiled Carrot & Green Peas – 1 bowl
- Vasant Coriander Powder – 1 tsp
- Vasant Classic Garam Masala – 1 tsp
- Turmeric Powder – ½ tsp
- Salt – To taste
- Boiled Khichdi – 1 bowl
Method
For the Khichdi:
- Drain the soaked moong dal and bajra and transfer them to a pressure cooker.
- Add water, oil, and ghee. Mix well.
- Pressure cook until the bajra and moong dal are completely cooked.
- Once cooked, mix the khichdi well and keep it aside.
For the Masala:
- Heat 2 tbsp oil in a pan and add cumin seeds and whole mixed spices. Sauté for a few seconds.
- Add chopped garlic, ginger, and green chilli. Sauté lightly.
- Add chopped onion and cook until translucent.
- Add chopped tomatoes and cook until soft.
- Add boiled carrot and green peas. Mix well.
- Add Vasant Coriander Powder, Vasant Classic Garam Masala, turmeric powder, and salt.
- Mix well and cook until the spices are well combined.
For Combining:
- Add the cooked khichdi to the prepared masala.
- Mix everything well and cook for a few minutes.
- Add water as required to adjust the consistency.
- Finish with ghee and mix well.
- Serve hot.
Matar Ka Nimona

- Oil – 3 tbsp
- Methi – 1 tsp
- Vasant Strong Hing – 1 tsp
- Whole Mixed Spices – 1 tbsp
- Chopped Ginger – 1 tsp
- Chopped Garlic – 1 tsp
- Chopped Tomatoes – 1 bowl
- Potatoes – 1 cup
- Fresh Green Peas – 1 bowl
- Water – 500 ml
- Vasant Classic Garam Masala – 1 tbsp
- Chopped Coriander – As required
Method
For the Nimona:
- Heat oil in a pan. Add methi, Vasant Strong Hing, and whole mixed spices. Sauté for a few seconds.
- Add chopped ginger and garlic and sauté lightly until fragrant.
- Add chopped tomatoes and cook until they become soft.
- Add potatoes and fresh green peas. Mix well.
- Add water and bring the mixture to a boil.
- Cover and cook until the potatoes and green peas are completely cooked.
- Add Vasant Classic Garam Masala and mix well.
- Cook for a few more minutes until the gravy reaches the desired consistency.
- Finish with chopped coriander and mix well.
- Serve hot with steamed rice.

Ingredients
- Ghee – 2 tbsp
- Mustard Seeds – 1 tsp
- Chopped Green Chilli – 1 tsp
- Chopped Ginger – 1 tbsp
- Crushed Corn – 1 bowl
- Milk – 1 cup
- Vasant Classic Garam Masala – 1 tsp
- Vasant Turmeric Powder – 1 tsp
- Chopped Coriander – As required
Method
For Bhutte Ki Kees:
- Heat ghee in a pan and add mustard seeds.
- Once they crackle, add chopped green chilli and ginger. Sauté lightly.
- Add the crushed corn and mix well.
- Add Vasant Turmeric Powder and Vasant Classic Garam Masala. Mix well.
- Add milk and cook on a medium flame, stirring continuously.
- Cook until the corn is soft and the milk is absorbed, giving the mixture a creamy consistency.
- Finish with chopped coriander and mix well.
- Serve hot.
Dabeli Bruschetta

Ingredients
- Oil – 2 tbsp
- Turmeric Powder – 1 tsp
- Salt – To taste
- Red Chilli Powder – 1 tsp
- Vasant Classic Garam Masala – 1 tbsp
- Tamarind Pulp – 1 tbsp
- Water – 30 ml
- Boiled Potatoes – 4–5
- Masala Peanuts – 1 tbsp
- Pomegranate Seeds – 1 tbsp
- Dry Coconut – 1 tsp
- Chopped Coriander – 1 tbsp
- Garlic Bread – As required
- Amul Cheese – As required
- Nylon Sev – For garnish
- Chopped Coriander – For garnish
Method
- Heat oil in a pan. Add turmeric powder, red chilli powder, Vasant Classic Garam Masala, and salt. Sauté well.
- Add tamarind pulp and water, and mix well to combine all the spices.
- Mash the boiled potatoes and add them to the pan. Gently mix until the potatoes are well coated with the masala.
- Add masala peanuts, pomegranate seeds, dry coconut, and chopped coriander. Mix everything well to prepare the dabeli potato mixture.
- Cut the garlic bread into slices and evenly spread the prepared dabeli mixture over each slice.
- Top each slice with grated Amul cheese.
- Toast the garlic bread in an oven or on a pan until the bread turns crisp and the cheese melts.
- Garnish the prepared dabeli bruschetta with nylon sev and chopped coriander.
- Serve hot.
