Adadiya pak is a traditional Gujarati desert, which is prepared during winters. Adadiya pak is made with lots of spices, dry fruits, ghee along with black gram flour (urad dal ka aata). All these combines make this very nutritional and healthy to be consumed, especially during the winter season. It is also believed by our ancestors, that if you consume Adadiya pak daily in winter, it will keep you healthy for the whole year.

For Adadiya Pak Masala: 

For Adadiya Pak:

  • 150g Edible Gum (Gund)
  • 1 cup Black Gram Flour (Urad Dal Ka Aata)
  • 1 cup Mawa (Khoya)
  • 1 cup Milk
  • 1 cup Ghee (add more if needed)
  • 1 ½ cups Sugar 
  • ¼ cup Crushed Dried Coconut
  • ¼ cup Dry Fruit Powder (Almonds, Cashew, Pistachio)

For Garnishing:

  • Almonds Finely Chopped
  • Pistachio Finely Chopped

Procedure to Make:

Adadiya Pak Masala:

  • Roast all the spices on a slow flame for about 5 minutes and then let them cool.
  • Once they are cool, grind them into a fine powder.
  • Now keep it aside for later use.

Adadiya Pak:

  • In a large thick kadhai, pour some ghee and let it melt for a few seconds, then fry edible gum (gund) in ghee.
  • Now crush this fried gund with a mashing spoon.
  • Now in a pan, add ghee & milk to urad dal ka aata and let it sit for two hours.
  • After that, pass the flour through the sieve. It will be like rava.
  • Now in the same pan, take 1 cup of ghee and then add the flour & mawa, let it cook on low flame for 20-30 minutes until it becomes brown.
  • Now add crushed dried coconut & fried gung, mix well.
  • Add Adadiya Pak masala & dry fruit powder to the mixture.
  • Mix the whole mixture properly.
  • Now turn off the stove and pour the mixture into another bowl.
  • In the same kadhai, take 1 cup of water and prepare 1 thread sugar syrup.
  • Once the sugar is melt, pour it into the previously prepared mixture.

For Assembling:

  • Take a platter (parat) and grease it well with ghee.
  • Now pour the mixture into it and flatten it using a flat-bottom bowl.
  • Decorate it with finely diced almonds and pistachio.
  • Now cover it with a thin cloth and let it become firm.
  • Keep checking on it to see if it has become firm or not.
  • Once it is cooled and firmed, cut it into square or diamond shapes.
  • Your Gujarati Adadiya Pak is now ready.


You can also shape them into laddu when the mixture is hot. Just grease your hands and shape them and then garnish with the finely chopped almonds and pistachio. It's up to you, make them how you like it.

You can store it in an airtight container for up to 3-months.
