If you’re a Gujarati, you already know how important Uttarayan or Makar Sankranti is. Though it is celebrated across India, Gujarati people celebrate it in a far more magnificent way. Along with surya pooja and kite flying, the Gujaratis eat a special dish called ‘Undhiyu’. It’s utterly delicious. We’ve noted down each and every detail about how to cook authentic and lip-smacking Gujarati Undhiyu using pure Indian spices from Vasant Masala.

Recipe:

To prepare Undhiyu, firstly you’ll need to prepare a round shaped food item called ‘Muthiya’ or ‘Muthdi’ which will become one of the ingredients for Undhiyu. Please note that we are preparing Undhiyu which serves 4 people. If you’re making it for more, use ingredients accordingly.

Ingredients for Muthdi:

  • 1 cup of chopped fenugreek leaves
  • ¼ cup of whole wheat flour
  • 3 table spoon of besan/ gram flour
  • ½ tea spoon of ginger and chilli paste
  • ¼ tea spoon of Vasant Turmeric Powder
  • 1/8 tea spoon of baking soda
  • 1 tea spoon sugar
  • ½ tea spoon of Vasant Kashmiri Kumthi Chilli Powder
  • ¼ tea spoon of Vasant Coriander Cumin Powder (Dhaniya Jeera Powder)
  • Salt (As per your taste)
  • 1 tea spoon of oil for the dough and ½ litre for frying
  • 2 to 3 tablespoon of water

Method to prepare Muthdi:

  • Take a bowl, mix all the listed ingredients and prepare a dough.
  • Once the dough is prepared, make small round shaped Muthdis from the dough
  • Take a frying pan, pour half a litre of oil and deep fry all the Muthdis.
  • Once the Muthdis are brownish in colour, take them out on a plate.

Now that Muthdi is ready, let’s make delicious Undhiyu.

Ingredients for Undhiyu:

  • Fried Muthdi
  • 7 mid-sized potatoes
  • 7 small brinjals  
  • Two ripe bananas
  • ½ cup of field beans or vaal dana
  • ½ cup of toor dana or green pea
  • ½ cup of green chickpea
  • 1 cup of grated fresh coconuts
  • ½ cup of green fresh garlic
  • 1 teaspoon Ajwain or thymol seeds
  • ¼ teaspoon of hing or asafoetida
  • ¼ teaspoon of baking soda
  • 1 tablespoon of ginger chilli paste
  • ¼ teaspoon of Vasant Turmeric Powder
  • 1 tablespoon of salt
  • 2 tablespoon of sugar
  • 2 tablespoon of Vasant Chilli Powder
  • 4 tablespoon of Vasant Coriander Cumin Powder (Dhaniya Jeera Powder)
  • 2 cups of coriander or dhaniya
  • ½ cup of oil

Method to prepare Undhiyu:

  • In a large bowl, add coriander, grated coconuts, green garlic, salt, sugar, Vasant Coriander Cumin Powder, Vasant Chilli Powder, Vasant Turmeric Powder, ginger chilli paste, baking soda and oil. Mix everything very well and put it aside. This will be the masala stuffing for the Undhiyu.
  • In a big pan, heat the oil and add hing, toor dana, vaal dana, green chickpea, Vasant Thymol seeds and baking soda and mix them well. Now add some masala stuffing we’ve prepared earlier and mix them again. Now add ½ cup of water in it and cook it for 5 minutes on a medium flame.
  • After 5 minutes, stuff potatoes and brinjal with masala stuffing and add them in the pan. Now add some masala stuffing again in the pan, add some water in it and mix them well. Now cook it further for 5 minutes on a medium flame and cover the pan with a lid.
  • After 5 minutes, check whether the potatoes are cooked well. Now add the Muthdi that we prepared earlier in the pan and cook it further for 2 minutes on medium flame.
  • That’s it. Authentic and delicious Gujarati Undhiyu is ready.
