o Ingredients

- 2 cups of Basmati rice

- 1/4th cup of curd

- 3 cups of water

- 2 tablespoons of ghee

- Salt as required

- Fried onions

Vegetables required:

- 1 cup of onion (sliced)

- 1.5 tablespoons of ginger-garlic paste

- 2 cups of Beans

- 1 cauliflower whole

- 1 cup of potato

- Other vegetables of your choice

Whole spices required:

- 4 green cardamoms or elaichi

- 4 cloves or lavang

- 1 inch Cinnamon

- 1 bay leaf

Powdered spices required:

- ½ teaspoon chilli powder

- ½ teaspoon turmeric powder

- 1 teaspoon Vasant Biryani masala

o Method:

- Firstly, wash the basmati rice well and soak it for 30 minutes.

- Now, pour ghee in a pan and sauté all the whole spices for a minute.

- Once an aromatic smell is released from these spices, add sliced onions to the pan and cook till they are brown.

- Further, add ginger-garlic paste and stir well. The raw smell of ginger-garlic paste should go before you proceed for further steps. This will ensure that the biryani masala you add in the later stages gives maximum flavour to your biryani.

- After the raw smell goes off, add all the vegetables you want to add in your Biryani and cook well. Toss the vegetables once before proceeding for the next step.

- In this step, add curd, chilli powder, turmeric powder, and Biryani masala. Mix everything well and let it simmer.

Powdered spices required:

- Take a good pot for layering.

- Start with layering the vegetable gravy at the bottom of the pot.

- Now, add the soaked rice over it.

- Add the vegetable gravy again followed by soaked rice.

- Repeat it.

- Further, add water to the pot.

- Season the Biryani with some salt and fried onions.

- Now, cover the pot and cook it on a medium flame till the rice is cooked.

- Serve hot.
