As far as pickles are concerned, it is advisable to make them at home. Readymade pickles usually contain artificial colours and preservatives which are dangerous for your health. Hence, make them at your home and save yourself from such dangers. As home-made pickles contain fresh Indian spices, especially the Achar masala, they are also power-packed with health benefits, making it a healthy choice.

Raw mango pickle:

Ingredients:

  • 4 cups of raw mango
  • 4 tablespoon Vasant Achar masala
  • 1 tablespoon Onion Nigella seed (Kalonji)
  • 1 tablespoon coriander powder
  • 2 tablespoon turmeric powder
  • ½ cup oil
  • Salt as required

Method:

  • Wash the raw mangoes well and dry them well. Ensure that no moisture is left within them. Further, remove the seeds and cut them into cubes.
  • Take a large bowl. Put these mango cubes into it. Add salt and some turmeric powder. Let it marinate for eight hours. Marinating the mangoes will help in releasing the water.
  • Later, discard the water and dry the mangoes.
  • In a large bowl, mix the mangoes with Vasant Achar masala, Onion Nigella seeds (Kalonji) and some salt.
  • Store in airtight containers.

Sweet lime pickle:

Ingredients: (For 2 cups)

  • 14 medium sized pickles
  • 2 tablespoon fenugreek seeds
  • 1 tablespoon asafoetida
  • 1.5 cups oil
  • 2 tablespoon Vasant Sweet Achar masala
  • Salt as required

Method:

  • Heat a non-stick pan. Roast fenugreek seeds and asafoetida for two minutes on a medium flame. Be cautious while doing so. The spices should not burn.
  • After two minutes, remove the spices from the heat and let it cool completely. Further, make a fine powder from it.
  • Meanwhile, boil the lemons on a medium flame for about six to seven minutes. Drain well and cut them well.
  • Moving ahead, heat some oil in a pan. Add Vasant Sweet Achar masala in it and sauté for a minute.
  • Add the cut lemons and the fenugreek and asafoetida mixture to it. Mix well and simmer for three to four minutes.
  • Cool the mixture and store it in an air-tight container.
