During the lockdown, it's difficult to get all the ingredients to make a particular dish. But while there are few in the kitchen, we can try and make delicacies that require lesser ingredients. So, here are a few recipes that you can easily make at home using few ingredients.

1. Curd Rice :

It is a popular South Indian dish made with cooked rice, curd, and tempered spice. Curd rice is a great summer and comfort food that can be made with just 5 ingredients.

Ingredients :

  • 2 cups cooked rice
  • 1 cup curd
  • 1 teaspoon mustard seeds
  • 1½ tablespoons oil
  • Salt to taste

METHOD TO PREPARE

  • In a pressure cooker, add rice and water together. Cook until the rice is fully boiled.
  • Add curd and a pinch of salt onto the cooked rice and mix it well.
  • Now for the tadka, heat the pan, add oil and mustard seeds. Saute them well.
  • Lastly, serve the curd rice in a bowl and pour the tadka over it.

2. Besan Chilla :

It's an Indian pancake made with chickpea flour (besan) and spice like ajwain. It’s an easy recipe to make for lunch or brunch.

Ingredients :

  • Besan
  • Ajwain (Thymol seeds)
  • Chopped onion
  • Chopped tomato
  • Turmeric
  • Oil
  • Water
  • Salt

METHOD TO PREPARE

  • Mix all the ingredients, besan, ajwain, chopped onion, tomato, turmeric powder, salt, and water. Make a thick batter. Keep it aside for 15-20 minutes.
  • Heat a tbsp of oil in a frying pan on a high flame. Pour the batter in the center of the frying pan, spread it evenly.
  • Lower the flame and let it cook till the edges become a little brown and can be lifted easily.
  • Drip a little oil around the cheela, so that it soaks the oil.
  • Flip it over to cook the other side.

Serve besan chilla with tomato ketchup or chutney.


3. Masala Paratha :

Masala Paratha is another version of a simple paratha with some spices on it. It is a simple, quick recipe with ingredients that are used by every household.

Ingredients :

  • 2 cups whole wheat flour
  • ½ teaspoon garam masala powder
  • Salt as per taste
  • Oil
  • Water

METHOD TO PREPARE

  • In a mixing bowl pour 2 cups of whole wheat flour. Add ½ teaspoon garam masala powder, salt, 1 tablespoon oil, and ½ cup water. Mix well and begin to knead.
  • Knead to a smooth and soft dough. Cover the dough and keep it aside for 30 minutes.
  • Next, make medium-sized balls from the dough and start rolling to a round of about 7 to 8 inches.
  • Now on a heated Tawa, place the paratha. Let it cook on a medium to high flame.
  • Flip the paratha when its half cooked. Spread some oil over it. Repeat the same on the other side.
  • Keep flipping until paratha is evenly roasted and cooked.

Serve it hot with pickle, curd, or any vegetable curry..
